light, balanced, sharp
Right out of the box extremely sharp, and well balanced. Included in the box were instructions for care and sharpening; unfortunately they are in japanese. Other than that, this seems to be an excellent knife - not the most expensive Misono, but it appears to be a nice balance of quality and price. So far, out of the box, I'm happy, but I will attempt to update this rating after I use it for a while.UPDATE: I had not used this knife in a while, but I had the opportunity today. I had to chop some bermuda onions and cut some veggies,and I thought this would be a good chance to once again try the Misono. My, what a pleasure to use this knife. I do not care for the term "like a hot knife through butter" but this knife cuts effortlessly, and I plan to use it whenever I can. I hope this helps anyone who may be looking for an excellent knife and is turned off by the high prices of the better known brands.

I’m beginning to feel like an accomplished chef!
It felt like cutting through room temperature butter while slicing vegetables. I am very pleased with the quality and use it nearly every day. Since quarantining due to the pandemic, I have really enjoyed developing my culinary skills. This knife came highly recommended from a friend who is a professional chef. My friend gave me good advice.

Love This Knife
This knife is great, takes a sharp edge and holds it. Comfortable to hold. My fellow coworkers love this knife too. This is my daily work knife.

Discoloring
Because of the type steel used to make these knives, it becomes discolored the moment food touches the blade. Even using steel wool does not make it look better. It is sharp but I can get other sharp knives that also remain looking good. Not only does the metal affect the appearance, it also makes some foods on which it is used have a metal taste. It was very disappointing especially considering the cost.
