Dulls very quickly.
It does not hold the edge and dull very quickly. Can get similar quilty for cheaper price

This was the perfect boning knife, nice and sharp. Very sturdy. The blade isn't wobbly. I would recommend it. I would recommend the vendor and it's actually one you can resharpen

I won't claim to be a knife expert.... but for the price of the knife it performs perfectly when cutting meat, trimming roasts, brisket, etc. So far it's maintained it's edge, although not using it daily. Just as sharp out of the box as a knife 5X+ the cost. Would buy again simply because it's a great value - heck, buy 5 of them and I'll have a sharp, useful knife for years to come. Only con I have: does not come with a case/sheath.

I was turned on to Mercer knives years ago from a teacher who taught cooking classes. I asked what was a good knife that wouldn't break the bank and she said, for all her new students she refers them to the Mercer knives. I bought my first one for around $22 and it's been going for years now and holds a great edge. I have much more expensive knives now and the Mercer still gets used just as much. This one is no different. Super sharp right out of the packaging and a great feel. If you are looking for a great low cost chef knives, i highly recommend the Mercer line. You wont be disappointed
