If You're on the Fence...
I’ve been buying natto in the frozen food department of my local Asian food store for years, in those little styrofoam containers—ever since I read about the Okinawan diet in Dan Buettner The Blue Zones 15 years ago! I figured ‘might as well try.’ The touted health benefits were intriguing. From the get-go, I knew it was an acquired taste. I used the little mustard packs but threw out the flavoring pack for fear of msg. From the very beginning, I was hooked. I happened to not only like the flavor of natto but craved it with a little rice and a scrambled egg or sardine a few mornings a week. Over the years, however, I also read about soybean production in Asia and the use of pesticides in most commercial soy endeavors. Soybeans are not the greenest product for the planet, nor are styrofoam containers which are not biodegradable. You know where I’m going with this. I stumbled upon a source of natto, not only from US grown soybeans, but sustainably sourced organic ones, from a little company out of Vermont. “Hmm, the price is higher,” I lamented, “but what is my health and worth?” I have my answer. And I hope this helps anyone ‘on the fence’ about whether to try this brand. My Rhapsody Brand natto arrived a few days ago. I put a few cartons in my fridge, and froze the rest. For my needs, one carton is two servings. So a case will last me about 2 months. It is not only fresh but absolutely delicious. (if you already crave natto, you will not be disappointed, and if you’ve never tried, this is a good place to begin!) You are getting a quality product organically grown and made in the US! The cartons are biodegradable. What’s there not to love!!

Am...am I a natto addict now?
I can't get enough of this stuff now. The smell is pretty bad, and at first the texture downright abhorrent. The taste, at first? Not too shabby! Now, I literally CRAVE this stuff, and my health has shown marked improvement since I started ordering and eating this! Like another reviewer, a good sized glob of Asian mustard, and soy-sauce make for a flavor that indescribably grows on you and you start to crave! I TRY not to eat this every day to not over-do it on soy, and to eat Kimchi for the pre/pro biotic factors on the days I don't, but at the end of the day, when I don't have it now, I can feel that my diet was missing SOMETHING that day. Anecdotally, I had previously had natto a couple times, wasn't a big fan. I found myself out of the blue CRAVING it a few months back, and finally caved and got some. I immediately felt more "bright" and the gut issues I had been experiencing due to other health reasons subsided almost entirely. I do wish it was a bit cheaper. I do wish it was locally available and I didn't have to order it from afar, and I'll be the first to admit that it stinks and the texture can be ...challenging (my family can't even be in the same room as me when I eat it) -- but it legitimately TASTES good with a little doctoring up and I feel GOOD after eating it. I'm not sure why, as a fermented product, it has such a short "consume by" date, but it is what it is I guess. My biggest concern at this point is, I'm worried that I might have become hooked on it.

Great product...learning to love the taste
I am new to natto. My journey into different foods started with the purchase of my Zosirushi rice cooker. I am eating rice daily (washed and rinsed of starch). The search for stuff to put on rice began. I remembered natto from YouTuber Emmy years ago. Began looking locally. No Natto and no one knew what it was...and looked skeptical when I described it. No we don't got none of that round here .....sigh. saw this on Amazon. Thought on it for a month. It's not cheap, I live in humid climate, ECT. Thought about trying to make my own. Wanted to eat it first from someone who creates it regularly. First about packaging, don't listen to your Amazon message of delivery. This company collects your order and will mail it the Monday of the next week. True to word I got it the next week on a Thursday. The box was smaller than expected. Opened it, the cups were completely encased in thick foam with an ice pack. My beans still felt cool to the touch (the little cups). I immediately froze all but three cups of the beans. I let my beans sit in my fridge overnight as suggested. The person who sells this included information about keeping and storage, serving suggestions etc. I sat and read everything. Next day after work I made a pot of fresh rice, bought fresh green onions and was ready. I first made their suggestion of soy sauce and yellow mustard. Not bad but a taste I have to get used to. I'm used to beans with a whole different taste. This has been a learning curve. First try was with half of one of the little cups (picture with green onions). Now I'm using about a tbsp of natto mixed well with my natto sauce (recipe easy to find with internet search), bean sprouts and a little wasabi. I put that over maybe half to one fourth cup of rice. I eat other stuff for breakfast, miso, egg roll, tofu etc. I find natto makes me feel full faster. Lost some weight changing my diet btw. My thoughts: Before eating natto I googled and watched YouTube vids. In retrospect I look back at those and chuckle. Some people are using the stretchy nature of the product for shock value. One vid the lady mixing it became alarmed at the slimy texture and stopped stirring and was almost gagging. Maybe it's because I've cooked alot of okra in my life that I had some background with this kind of texture. You have to stir natto well. Till its smooth and creamy. I let mine sit on the rice while I prepare other things. The rice absorbs the creamy part and leaves the beans. If you let the beans sit and rest in the seasonings first before putting on the rice the beans absorb the seasonings. The bean sprouts give a lovely fresh taste. I'm now researching adding natto to my miso and making other dishes from it. I will order from this seller again. Hope this review helps. Picture with fresh pour of natto showing creamy texture.
