Be Careful! Pure Ghost Peppers Are Downright Dangerous!!
I am a huge fan of the Savory Spice Ghost Pepper Salt. I used to buy a pound a year. But the price just keeps going up and up, and finally I decided to see if I could make my own. I asked Chat GPT for recipes and instructions that would closely match the product that Savory Spice sells. Chat delivered, and I ordered these dried ghost peppers, course salt, and cocoa extract liquid. I ground these peppers up in a food processor and dumped them onto a scale. Exactly six grams, which is a bit shy from the 10 grams in the advertisement. You'll need to know this for recipes. The food processor did not grind them fine enough, so I ran small batches through a mortar and pestle. Wear a mask, eye protection and gloves. I did not, because I'm a guy. I got a small piece of ghost pepper under my wedding ring and ended up with a blister. I cannot imagine the pain of getting pure ghost pepper where you don't want it. I suspect serious respiratory damage and loss of vision could result. Don't be stupid like me, wear your protective equipment. After going through the mortar and pestle, I sifted the powder, reground what remained, and re sifted. Some of the seeds and stalks would not grind any smaller, so I threw those away, leaving 5 grams of finely ground ghost pepper. In other words, I netted half of the advertised quantity. This did not matter in my case. For my recipe, I used 7 ounces (200 grams) of salt. This is a 40:1 ratio of salt to peppers. The recipe I used suggested anywhere from 50:1 to 25:1. The recipe also said to mix the chocolate extract into the salt first. Only enough to make the salt behave like moist sand. Then dry it, quick regrind, then mix in the ground peppers. You are supposed to let the mixture cure for a few days, but I wanted to try it. I found the flavor and heat close to what Savory Spice sells. Next time I will use a spice grinder instead of a mortar and pestle because the ghost pepper pieces were too large. Still, it worked well. This brand of ghost peppers certainly upheld the reputation of Ghost Pepper! Hot hot hot! Keep in mind you may not get quite as much as advertised, so keep that in mind for your recipe. I will be ordering more of this along with a spice grinder. Savory Spice sells 2.3 ounces of their product for $14.95. I have lots of salt and cocoa extract left over. I made 7 ounces for about $10.00, so about $1.43 an ounce vs Savory's cost of $6.52. Of course, this does not factor my time. But a couple three hours once a year will save some serious money. I have been informed though, by my otherwise very patient wife, that the next grinding job will not happen in the house! I might try to find pre-ground ghost peppers.

Great Challenge
Was doing a challenge for Twitch. They're a bit dry, but that's kind of the point! It's to preserve the pepper so I could buy these ahead of time and store the rest for later. I might use the others for future meals tbh. The peppers arrived packaged well and without damage. They were whole peppers as described, and I appreciate that the package was resealable. I don't know what to do with the other 6 peppers, but like I said maybe I'll mix them in ramen or something. Also, for anyone curious, these peppers really aren't that bad as long as you don't breathe. See, the airflow causes it to burn pretty bad. So, now you know. Unfortunately, most humans require breathing to survive. If that's you, then GL. I found donuts and milk helped a LOT. The fat in the milk (2% or higher) helps break down the capsaicin, while the donut (I used maple and chocolate, both worked great) sweetness from the sugars helped overwhelm the taste buds. The throat burn mostly benefited from the milk. Water only temporarily relieves the burn. Food Theory actually did a very good article on this, and Gordon also gave great advice on Hot Ones. But I'm getting off topic. Fun challenge, and this product was VERY good for it. If you want a fun challenge with friends, this company has a great product, and decent value for Amazon shipping.

Put all of them into a small batch of salsa. I made sure to have icecream on hand don't worry. They told me it was a slow burning intensity that got worse and worse over 20 minutes.
