Both bold and elegant
The quality olive oil picture runs the gamut between oils designed to be team-players, and oils designed to stand out. This Hojiblanca oil is a unique type of stand-out, with an elegant but pronounced high note of freshly cut grass. The finish, to me, is relatively mild, a little bitter or edgy but not the in-the-throat peppery finish of a stronger Italian oil. The high cut grass note means it tends to slice through the existing flavour profile of a dish more than blending with it, though this of course depends on the dish as well. Along with other high note ingredients like lemon or vinegar, it adds an element of zing in moderation. But, as an oil, it also expands and enhances the existing flavour profile, meaning it adds oomph as well. This combination of zing and oomph means not as much is needed, so for me this oil is more economical than it appears. I love this oil, but it is quite bold, almost monolithic, so tend to use it sparingly, moderating the oomph factor somewhat. An interesting surprise is that small amounts work well with dishes that are mildly sweet.

I am absolutely thrilled with this Spanish olive oil! The quality is outstanding — it has a rich, smooth flavor with a hint of peppery finish that’s perfect for both cooking and drizzling over salads or bread. Very good olive oil, but doesn't taste like the hojiblanca oil I had in Spain.
My first encounter with hojiblanca oil was at the restaurant located at the bull fighting ring in Ronda. I was really taken back at how delicious olive oil could be. Several times later in the trip, I had grated fresh tomatoes on a fresh roll, then smothered in hojiblanca oil. The exquisite flavor of this oil was amazing. Whole Food markets, near where I live, used to handle hojiblanca oil that had this wonderful flavor, but have since replaced it with "Extra Virgin Olive Oil Of Seville" which does not taste the same. Finca La Torre Hojiblanca oil is definitely high quality oil, but does not taste like the Spanish hojiblanca oil that I grew accustom to after spendsin 8 weeks in Spain and the hojiblana oil that Whole foods no longer handles. I find the Finca La Torre version grassy which is something I did not experience with Spanish hojiblanca oil. So, if you want a high quality oil, Finca La Torre Hojiblanca will not disappoint, but to my taste buds, it's not the hojiblanca oil that I remember.

Lo probé en un curso de cocina, y me pareció delicioso . Como buen foodie, soy amante de los vinos y aceites, y no pierdo oportunidad de probar los que pueda. Este finca De la Torre es excelente y aunque pelin caro comparándolo con aceites de calidad portugueses o italianos , reconozco que tiene mil matices y se ve la calidad.

This is fantastic. It arrives in a beautiful box and a great dark glass bottle and the oil is utterly delicious. We use it mainly for salad dressings and drizzling onto things and the taste reminds me of growing up in Italy with warm summer evenings amongst olive and lemon groves. It is a smooth, complex top quality oil from an award-winning estate. You won't be disappointed. This would make a wonderful present for the person who has everything but who appreciates high quality food. I wish someone would give me this instead of all those ghastly scented candles.
