- Bright-red chiles de árbol are two to three inches long and slender. Chiles de árbol are almost always sold dried and unlike other dried peppers, which tend to brown during the drying process, chiles de árbol retain their red color. Like other members of the Capsicum annum species, chiles de árbol grow on a bush, where they ripen from green to red.
- Chiles de árbol are also known as the pico de pajaro or bird's beak chile—not to be confused with the Thai bird's eye chile.
- Chiles de árbol are pretty spicy, registering 15,000–30,000 on the Scoville scale. Chiles de árbol are little milder than cayenne pepper (30,000–50,000 Scoville heat units) but significantly hotter than a jalapeño pepper (2,500–8,000 SHU). They have a smoky, nutty flavor that is further enhanced by toasting.

    Just what I hoped for!

Having lived in southern NM for 14 years some time ago, I was totally pleased with these chile pods.  The color was bright red as they should be and they were in good shape, no crumbled pods and so no waste.  My method as taught to me in NM by some ladies who know is to place themin the kitchen sink, pull off the stems and shake out as many seeds as you can.  Then put the pods into a pan of very  hot water and let them stand for upwards of 20 minutes to soften.  Pour the pan contents into a sieve  set over a large pot in order to save the water.  One by one take a pod out, place it on a baking sheet, cut it down one side and open it up.  Use a sharp paring knife and scrape the chile "meat" off the skin. When finished, place the chile in a saucepan, add garlic and oregano to taste and enough of the chile water to make it  a sauce consistency.  Heat it to a simmer and cook for about 20 minutes.  Add more water as is necessary.  It is now ready for enchiladas as is or what we call Chile Meat, by adding prefried chunckis of beef or pork or fried ground beef.  Serve with beans on the side or add them to the pot.  New Mexican Perfection!
