Angefangen mit nem stumpfen 10€ Messer ausm Supermarkt und dann langsam zu meinen Wüsthoff Messern vorgearbeitet. Mit Studium von YT Videos und etwas Geduld habe ich 5 Messer scharf bekommen und fühle mich angesichts der Ergebnisse wie ein Profi. Wie ein Malen-Nach-Zahlen-Malprofi halt. Habe relativ viel antragen müssen, da die Messer seit 2 Jahren keinen Schliff bekommen haben. Der 400/1000er Stein hat leichte Abnutzungsspuren. Aber längst nicht die Dellen, die hier teilweise beschrieben werden. Es heißt, dass die Japanischen Steine etwas weicher sind und man die von Zeit zu Zeit mit einem Abrichtstein wieder glätte muss. Aber das sehe ich in den nächsten Jahren nicht auf mich zukommen. Der 3000/6000er Stein sieht aus wie neu. Auf den Streichriemen musste ich nicht mal die Streichpaste auftragen. Die Messer erschienen mir mit Küchenpapierschneidetest scharf genug. Wer nun fragt: Lieber den festeren Dick Abziehstein oder die Japanischen weichen Steine? Die Japanischen beeindrucken die Gäste auf jeden Fall mehr.
