I'm sure there are better knives if you pay enough and if you are a pro chef you probably have them already but with this starter kit you can probably do 90% of your knife work at a fantastic price. It seems they aren't as sharp as they used to be when they're delivered, but that's not a big deal. Global knives are durable and fit perfectly in the hand. As with any knife, though, it's important that you feel them out before you commit. Some German knives are excellent as well, but I prefer Japanese. The edge angle on Japanese knives is different from European knives. Be careful when sharpening. But as long as you care for these things, they will literally last a lifetime. Looking to add a cleaver and a santoku and I'll have literally all of the bases covered. Anything else I buy after that will just be a luxury. I have serveral of them and they are great. No dishwasher and you need to sharpen them. They were recommended to me by Anthony Bourdan. These are very high quality chef's knives at a very good price. You take care of them and they will take care of you. **Q: Do global knives come with sheaths or can sheaths to fit be purchased?** A: Mine did not come with blade protectors. Global had everything I wanted in a knife. *by J***Y on February 9, 2010* I wanted my knives to have the following characteristics: 1. sharp 2. Lightweight 3. Thin blade. 4. The feel it will last forever. They are most definately sharp. Very light weight. Thinner blade compared to some German knives. I also got the feeling they would last forever due to the handle being metal too. Other knives you may have to worry about the rivets or deteriorating wood handles. Handles: I bought these online based on reviews and the pictures here on Amazon. In the pictures I thought the black dots may have been some kind of rubber for grip. I wasn't too keen of the thought of potentially having little pieces of rubber glued to the knife. I ordered this set anyway and was pleasantly surprised that the dots are just colored dimples like a golf ball. Utility knife grip: Looking at the picture of the utility knife I was worried about the grip because the handle looks a little different. I immediately washed this knife upon receiving it and used it to chop up some veggies. I found it very comfortable to use. No concerns with the grip at all. My set was out of the box sharp and I was chopping things up effortlessly.
