How do I replace a broken wire? Do I have to remove the handle; if so, how do I do that? Sorry, but I need step by step instructions.

Unscrew the handle and remove the broken wire from both ends. On the bottom of the slicer, there should be two wires taped to the bottom. Each wire has two loops on it. Slip the wire over both ends from where they were attached and screw the handle back on. The handle should allow you to put tension on the wire to make it good and tight. (The handle is the tensioning device.)

It came with extra slicing wires but has no instructions on how to replace a broken wire. How do I replace the broken wire with a new one?

If I remember correctly, as mine broke, your handle should slide right out because there is no wire on it. Unscrew the handle at the top, place the hook of the wire over the hole, screw the handle back on. Put the other end into the crack where the wire slices down into and slide your handle back into the board. That should do it!
