Balanced mixture, great flavor
I have always been a fan of restaurant korma, and it's taken years for me to figure out how to make it at home. This mixture was pivotal in me getting it right, finally. The instructions on the box, are helpful, but not what I would recommend you do for home cooking. First, it tells you to use the whole box, and I guarantee that is way too much for 2 or 3 people, the aromatics will be incredible, but it will be too spicy-hot to eat. You have to measure out all of your ingredients carefully, it's very easy to prepare way too much. I like Navratan shahi Korma: Green raisins, cashews, potatoes, carrots, cauliflower, cut green beans, cilantro (topping), and paneer. You start out with fried onion as a base, but for one, two or three people, you don't have to use a whole onion, half, up to whole is ok, but half is milder. I don't use meat usually, but chicken cubes and chicken broth is ok to add (last.) I most often use one can of whole coconut milk, and about 1/3rd to 1/5th of the powder in this package. Add it slowly and carefully and taste as you go. I've also made it with whole milk plain yogurt, in that case you may want to add a tablespoon of sugar. Add all the vegetables that need time to cook first, let them simmer gently in the sauce to cook. Hope this helps! This spice mixture is perfectly balanced and delicious.

Shan makes really good curry mixes. They are HOT for southern US tastes, and you might want to use about 3/4 of the spice packet the first time.

Inconsistent, but very flavorful
Korma mix- I've been buying this at my local grocery store for the past few years. The flavor is great, but there seems like there's a lot of box-to-box inconsistency. I've had anywhere from 3 to 7 cardamom pods in a box. This can be pretty spicy, so I usually leave 3-4 cardamom pods in there and take out the rest. Do this, and the spicyness will be fairly controlled. 3 pods will give you some gentle heat. 4 pods will make you sniffle. To save time and the mess, I usually use a bag of store-bought fried onions instead of frying them in the ghee. There is a flavor loss, but it's worth not having to do all the extra work. I've tried two other brands of Korma mix, but this is the one I keep going back to. I prefer the traditional/authentic taste of Indian foods, and this is the closest I've found. I usually make this with lamb shoulder, leg, or shank.

I liked this korma curry masala. However, I found that the recipe called for way too much butter, and I added more yogurt to dilute the butter. There was too much floating on top, and I'm someone who likes butter. I didn't use meat for this dish - I substituted chickpeas. I don't think that really changed anything; in fact, it probably reduced the amount of fat in the dish. The actual taste of the spice mix was amazing. The cardamom really shines through. For that, this mix is worth a try.
