Think this will work for gluing cardboard pieces together for crafting??

It worked very well for wallpaper and I think it would do the trick for gluing cardboard together.

Has anyone removed their paper yet? How easily did it come down?

It should come down very easily, as long as the walls were clean and primed BEFORE installing the wallpaper. I have been using this product for years.

Is this humid resistant

Not sure, I didn't use this in a super humid environment like a bathroom. It's held up well with normal levels of humidity.

Can i apply this directly on a wall that’s skimmed with joint Compound? Or do I need to prime first?

I would prime the wall first with an oil-based primer, then apply a coat of sizing (Roman makes sizing also). This will help keep moisture from the paste from getting into the skim coat.
