for cooking 1-2 steaks, this shape is better than a regular fry pan
This pan is called "crepe pan", but in reality that just means it has lower side walls than a fry pan does. That is a plus for me. Also, just noticed the thickness is about 2mm whereas the matfer skillets are 2.5mm, and De Buyer are about 3mm. This is important if you want to use it hot enough to sear steaks on an induction or maybe even electric stovetop... the thinner the carbon, the more prone to warping. I use gas so it hasn't been an issue. I bought this 8 5/8" crepe pan for searing meat -- 1 or 2 hamburgers, 1 or 2 steaks, etc., at very high temperature. The uncoated handle also works at high oven temperatures, as opposed to the Mineral B handles which would melt. The lower side walls make it easier to get a spatula under the meat, and also makes the pan about 25% lighter than the Matfer fry pan that would have the same flat cooking surface... the 9.5 inch fry pan. Plus I bought this at $18 when the 9.5" fry pan was about $32. It's also a couple of inches less diameter (including handle) vs. the 9.5" fry pan, so it takes up less space on the stovetop. So this "crepe" pan, for my purposes, was just better for every reason than the "fry" pan of equivalent flat cooking surface. P.S. I also have the Matfer 14 1/8 inch fry pan... it is enormous, with a full 12" handle, 24" overall width, but with that one I can really cook 4 steaks at high temperature (or 2 porterhouse).

Matfer ,missing from thr pan!
Pan looks well made, but nowhere the name of the name of the manufacturer is mentioned, hence 3 star.

Déçue
Petit modéle, un peu trop petit, mais vous n'étes pas responsable, j'aurais dû préter plus attention aux dimensions. Merci et bonne journée

They are well made, but require care
If you are not accustomed to using cast iron, and do not like to take extra steps to care for them, this is not for you. However, if you are willing to go through the process of cleaning (search the web for cleaning new ones) and then working with it until it reaches its non-stick status (it takes 4-6 uses, caring for it properly and heating or burner and applying oil after every use), then it is an excellent product. It is truly non-stick (again, as long as proper care is taken), and one does not have to worry about any chemical by-products or loss of non-stick qualities over time.
