So these pots and pans I had recommended to a friend around 5 years ago, he got them, and every holiday I get to use them as we host at his house. I have read the other reviews and let me put you mind at ease if you are considering these for your home, These do not stain easy as some of the reviews claim, The metal is called Stainless Steel for a reason, I worked for a while a Stokes and we sold these pots there along with Paderno and Longastina, the key to cleaning them is a product you can find most places now called: Barkeepers Friend, if for whatever reason you burn your pan or pot, boil water in it for around 2-5 minutes, take it off the stove and get the carbon out (burnt black bits) then put a quarter sized drop of barkeepers friend and it should clean right up. I have burnt dressing into these pans my friend was certain I had ruined his pot, boiled water in it for 5 minutes and then cleaned it with barkeepers friend and it was as good as new. the only time you should use these pots on MAX heat is when you are boiling water, otherwise you want to use them on medium to medium high heat, and be aware, because of the design of these pots and pans they heat up EXTREMELY FAST don't leave food unattended on anything higher than medium or it will burn. Use an ample amount of fat when cooking in these pans and if you are making eggs medium heat, food doesn't cook faster on high heat in proper pots the outside burns and the inside is raw, lower your heat, it will only add a minute or two to your cook time, but the over all quality of your food will be better.
