A one-of-a-kind, handsomely-designed four-color guide to artisan baking, featuring modern approaches to old-fashioned methods. Some of Dee Rettali''s recipes require patience and care, others can be made instantly-but all are love letters to the craft of baking. Dee walks us through how to bake with the fruits, spices, and herbs we have around us, loading our bakes with natural flavor and sparing ourselves piles of sugar and artificial flavors. Then, sharing two exciting new techniques that form the essence of craft baking, Dee teaches readers how to bake with a starter and, secondly, to ferment the batter itself. There''s no extra effort involved-just time-as you watch the cake rise and develop a rich, deeply complex flavor and texture similar to sourdough bread. Whether you eat it like a traditional cake or slice it up and eat it like bread, these cakes will be delicious longer than any cake you''ve ever made. Featuring cakes like Chocolate and Chili Sugar Olive Oil, Rhubarb and Lemon, Moroccan Honey with Cinnamon, and Walnut Butter Cake with Honey, these 90 recipes are sure to delight and surprise. Mouthwatering and unique, Baking with Fortitude is every baker''s newest obsession. Review: Lovely book with interesting recipes - I’ve been looking for a book to help with slightly more complicated recipes. I have found that ALOT of baking books have very basic recipes in and this helped. It’s got very interesting flavour combinations that might not be for everyone but it does give you a good starting point for potentially developing your own recipes and flavour combos. Nice looking book too. Also the price was great too! Review: Fortitude Bakehouse in London Shares Award-Winning Recipes - Baking with Fortitude: Sourdough Cakes and Bakes by Dee Rettali If you are ever in the heart of London, you will find tucked away down a cobbled side street the Fortitude Bakehouse, home to a spectacular array of sourdough cakes, buns, biscuits, and soda beads. It is sought out by people from around the world. The Food Nanny suggested her daughter, Lizi visit, and she did, just last week. Lizi filmed the owner and many of the delights that were for sale. She also stated, “I am going to buy your cookbook.” Well, I am not in England, the the Bakehouse goodies looked just too tempting — so, I ordered the cookbook. Published in 2021 when COVID was changing the lives of all involved with the Bakehouse, it became the winner of the André Simon Food Award 2021. [From the website] Dee Rettali is an artisan baker who, over a lifetime of baking, has honed her recipes to bring out intense flavor using forgotten craftsmanship. Dee's cakes, created for her bakery – Fortitude Bakehouse in London – are a world away from generic cakes loaded with sugar or artificial flavors. Many of her recipes are incredibly simple one-bowl mixes, brought together by hand and with no need for fancy kitchen equipment. The batter can be baked then or, to heighten the natural flavors and reduce sweetness further, left to slightly ferment in the fridge. This technique allows you to prep ahead and simply bake the cake when you want it. Some other recipes use a sourdough-like starter as a base to which any combination of seasonal flavors can be added. Dee has roots in both Ireland and Morocco that have inspired the unique flavor combinations in her bakes, such as: · White grape and rosemary cake · Marrakeshi mint and orange peel sourdough loaf cake · Blueberry and lime little buns · Turmeric custard and roast pear brioche buns · Chilli-soaked date and oat loaf cake This is a cutting-edge way of baking and at the same time it has antecedents in Dee's past. Growing up in rural Ireland, seasonal and no-waste baking was simply a way of life. This book brings this back to life in a thoroughly modern way.

Its Fortitude! Nothing Else to Say!
I’m embarrassed to admit, but when we visit London, we choose our hotel based on proximity to Fortitude Bakehouse. The tube next door is great, but it’s all about Fortitude, baby. Being able to walk out the one door and right into the warm fragrant eye candy that is Fortitude’s domain is…..holiday time. I like this cookbook. The author writes in a sort of shorthand, like I do when I write my own recipes down. Easy to understand, efficiently written as if you have a brain, no endless tips or tweaks. There’s some “random” ingredients (by American grocery standards) but I’ve already looked up substitutions and am ready to get whacking on some cinnamon buns, and a loaf or two. I count calories and have for years. These recipes are not a calorie counters paradise. However, having said that, I indulged in one or two treats a day for the week we were in London and no change. Sometimes an indulgence in quality ingredients “outweighs” (overcomes?) a package of junk food in critical ways. I’ll be making these as written with whole milk and real butter before I start my usual calorie cutting experiments. Sacrilege, eh?

Easy to follow, a great gift for bakers!
Very much appreciated by the recipient, who has been successfully making sourdough-based cakes ever since.
