I have talked on them but some friends and family say they have a hard time understansing me. On my end i can hear them perfect, but they can't on their end. So, i mostly listen to music out of them.

How on earth do you turn these headphones on? There are absolutely no instructions or assistance in this.

Hold the button on the outside of the earbud for a period of time and it will kick in

Can I turn off the touch?

I'm not sure about that if you find out let me know, its irritating that every touch can cause a change and no clear instructions
