What are the ingredients in Ball / Bernardin Pickle Crisp besides calcium chloride?

It contains only Calcium Chloride and makes pickles crisp with only 1/8th of a tsp per pint. I have used it for pickles carrots also

Do you use this in place of alum?

Yes and it works great! You only use 1/4 to 1/2 tsp. per quart of pickled vegetables and it really helps keep them crisp. Also works well with refrigerator versions too. Highly recommend this product and it has a great shelf life.

is this the same as "cal" as the latin markets have for making nixtamal?

Rick got it backwards i think. Slaked lime is calcium hydroxide and is not really dangerous. Calcium oxide is what you mix with water to make calcium hydroxide and is caustic.

My go to recipe is for cold water pickles.....can you use Pickle Crisp without boiling the brine?
