A 4 oz jar of yeast generally is under $5.00 off shelf in most any grocery store. The shipping alone buys a jar. Am I missing something?

This is not supply and demand. This is price gouging which another customer said. Has nothing to do with being able to afford i. It's about shopping smart which clearly you are not if you buy this at the asking price. You can buy 7-8 jars of this for that price.

How many loaves (approx) can be made from a jar of this yeast?

Your question is difficult to answer, because it depends on the recipe and loaf size. This was my first jar, more than half remains and I have made more than 10 loaves of bread. I would tell you to expect 20 or more loaves of bread. Hope this helps.
