I want to get this to show my high school students how the different components assemble together. Does it come apart into modules and rocket stages?

Yes. All of the stages fit together with bayonet-style fittings. I had this model as a kid and I played with it a lot and I broke all of the connecting tabs. You have to handle it carefully. There's even a lunar module inside the third stage with hinged legs. The command module can be docked with the LM and the upper stage of the LM also separates, so you can simulate an entire mission.

do you need two paint it?

Yes, the parts are molded mostly in white, so two get the black markings and other details you do need to paint it.

what kind of material is the rocket made of

This is plastic model kit. Required assembly and painting. Glue and paints are not included

What kind of paint is best to use on a model like this one?

Any of the commonly available model paints like Testors or Humbrol work perfectly. The answer above/below about spraying the paint is a good one for a better finish. The challenge on this model is masking off the areas you don't want painted. If you are not a regular modeler with a hobby spray gun, you can use the spray enamel for plastics found at Home Depot or Lowe's. Much cheaper than the Testors spray cans and works just as well if you find a brand with a fine spray. Gloss black should not be a problem.
