Hi, my headrest has a hole in the middle so the back support of the mirror wouldnt be supported. Can I still use this?

It depends how big the hole is in the headrest. The back support is fairly big so if it's bigger than the hole it would still work fine - maybe check dimensions with the seller. Hope that helps!

The straps wrap around a single headrest.As long as the headrests are separate from eachother so u can wrap the strap around, it's fine. I think that's what you mean.

does the ball joint soften in the heat making the mirror move angle?

I haven't noticed any issues with heat, however in the process of getting my little one in I normally end up knocking it and have to adjust it which ideally is done looking in your rear view mirror.
