How are people cleaning this. Mine seems to have a good bit of ground on dirt only after a couple of uses?

Absolutely brilliant especially if only cooking for 2 only have to clean griddle pan but yes also Good for larger number

Any suggestions as to what Utensils to use with this? Would stainless steel ruin the coating?

I use the Weber tools and they are stainless steel. This is ‘solid’ cast iron and not Teflon / coated so is fairly resilient. It is perfect as a flat plate for cooking fish especially. I love it. Do follow the instructions to get it as hot as required, that definitely helps.

Can you fix paella with the griddle?

I’ve never cooked one but I would probably say it’d not suitable. I would say the pan depth would be the same as a deep pan pizza base. This appears to be beeptter used for pan frying or griddling but it would all depend how big of a paella you are making.
