WHAT IS VG10 DAMASCUS STEEL? An outgrowth of laminated or piled steel, a similar technique used to combine steels of different carbon contents, providing a desired mix of hardness and toughness. This laminating process, in which different types of steel together produce patterns that can be seen in the surface of the finished blade, forms the basis for pattern welding. There is a VG10 steel core forged with 33 layers of Damascus steel on either side. The steel is laminated in the mold which layers of steel and steel core are sandwiched together. After more than one thousand degrees high temperature heat treatment and minus 100 degrees ice forging process. Make it looks exotic and downright gorgeous. Damascus steel knives are stronger than their historic counterpart, as they contain less impurities and are made with homogenous layers. The blade edge can reach to HRC 60±2. HOW TO RECOGNIZE REAL AND FAKE DAMASCUS? In some rare cases, people will try to pass off regular stainless steel with no layering as Damascus by laser printing a design on the blade. These are pretty easy to spot because they either don’t look like Damascus or the pattern could just rub off. Real Damascus is intrinsic to the steel itself but fake Damascus is only a facade. You can use sandpaper to get that satin look. Once it’s nice and polished, etch it with ferric chloride or muriatic acid. If the Damascus pattern comes back, it’s real. If not, you have a fake on your hands WHY DO PATTERNS LOOK SO DIFFERENT? There are many types of patterns you can achieve during the process of making. the most popular pattern is the “random” pattern, which is why the Damascus may look different from one knife to the other. Either way, most Damascus has its own personality and unique look. WHY CHOOSE NANFANG BROTHERS? We have 27 years' experience in producing professional kitchen knives. Our goal is that let all the people use a high quality kitchen kn Review: These are awesome! Great quality and craftsmanship. Review: Okay, for starters, this knife set is solid. You won't go wrong buying this if you are looking for a solid set of knives. So why not five stars? Well, I was right on the line to be honest, but a couple of things just pushed me into the four star range. Here are the pros and cons: Pros: * Solid set of knives. You know you have a solid knife in your hand. * Cuts like it should. * They look nice. * Has all the knives you need in a set. * They clean easily. Cons: Now, most of these are personal preference, so for you, these might not be cons. * I hate the scissors. They act more like pruning shears. (Well, in their defense, they do call them kitchen shears.) They have a spring which makes them pop open once you open the release at the end. The release itself is very cheap and actually cut my finger when I used these for the first time. it's almost as iff the shears don't close correctly and the latch is hard to get on them. Not the shears, but the bottom release. Not good. Also, who needs spring loaded shears int he kitchen? Give me a good set of kitchen scissors without the spring! * A couple of the knives do not easily slide out of the wood block, they stick a little. Maybe with time this will open up more, but at this price point I'd expect them to slide out easily. UPDATE: After a few weeks of use, no issues here. * All of the knives had to be sharpened a tiny bit. Maybe that's normal but it surprised me. UPDATE: I may have oversharpened the knives. They are too sharp now and I can't clean them without cutting up my wash towel. So don't oversharpen like I did! * Why no sharpening steel? That is a must. I am just shocked it wasn't included. * I feel the 8" Chef Knife is a little too light, especially when compared to the other knives. I don't want a super heavy Chef's knife, but this one feels a little too light. So, no red flags at all as this seems to be a great set, time will tell. Remember, the cons are all personal preferences. If you are looking for a solid set of knives, this set will do it. I hope this review was helpful!

I purchased these for my boyfriend as a surprise. He loves to cook and is knowledgeable in all things cooking tool related. I was a bit worried I’d purchase something he wouldn’t be happy with. But decided after the great reviews to give it a go. When he opened up the package and started to look the set over, I was so nervous! He was thrilled! He loves the set. He is daily showing me how easy they cut through whatever he is cooking up! He’s already looking at other items to add to the collection. Happy Customer!

Not much to say, they look great, feel good, and they don’t seem to chip or rust like the last knife set I bought. I really just like quality things, so I was preparing to spend several hundred on set of knives, but I’m glad I found something that truly exceeds its price point.

Knives seem pretty good and in great condition Knife block is not cut properly for all knives to fit. In the process of requesting a new block, but they want me to pay a tax. Follow up. After many friendly emails I was offered a full refund.
