For the DC flashing light version do all colors flash, or does just the red flash?

Yes, the LED beads inside every level just provide the color light same as the lamp shade color, the light color from the LED beads can't be switched.

How could I order a 1-layer product with amber color?

I Can't help you with the Amber color however. if you order a single layer light just know that it is a constant on and cannot be switched to flashing mode as advertised. Not sure if that is true with multilevel lights.

How do you switch from flashing to continuous?

Caveat emptor

Hardware is cheap chromed plastic. Electrical "schematic" leaves much for interpretation and refers to the wrong color wires, Bl= Blue not Balck and Gr=green not grey. It shows two contacts but not which does what nor which is NO or NC. Stcker they used is difficult to remove and leaves a lot of residue.
