Recently some tea experts have said not to use boiling water but more like 80C. So what is correct?

Hi Jon, When it comes to brewing Black Tea or Herbal Infusions, we have found a consistent outcome in flavour when using water just off the boil at around 98C, all the way down to around 85C. For White & Green Tea's we would recommend brewing at no higher than 70C to ensure you do not burn the leaves. So for the Premium English Breakfast Tea we recommend 85-98C brewing temperature.
