beautiful in form and function
I like the new Cerax stones with the included holder. I bought the Cerax 1000 with this, too bad that one didn't have the holder too. This is smooth as butter, wow! It actually removes material so it's not purely a polishing stone, although it does put a nice polish on the edge left by my Cerax 1000. I don't cut sushi and have never sharpened a Katana so 3000 is as high as I go. I like a little "tooth" in my edges. The 3000 creates an edge that looks nice and still cuts through tough skinned vegetables like there's nothing there. I used this stone for the same 14 or 15 knives I have done so far with my Cerax 1000. They ranged from small paring knives to 10" carving knives, some Western style and some harder Japanese steel. This stone still looks great too. I use the cheap little nagura they sent with it to clean the stone when I'm done, not during sharpening. This is a synthetic stone, it does not depend on a slurry to cut properly. Plus I don't know the grit of it. I know Suehiro isn't going to include anything that will damage the stone. That doesn't mean it's the same grit as the stone though so I don't expose knives to it.

Compared with the Ouka 3k
It’s a bit harder (it’s still a soft stone) than the Ouka a bit better polish but seems to cut a tad bit slower. Overall a great stone if you like soft stones.

Sinon a priori la différence entre CERAX et NEW-CERAX serait que la NEW-CERAX est collée sur un support. Sinon à l'usage ça semble très bon.

今まで使っていたものが 薄くなり割れてしまいましたのて゛同じものをリピートです 1000番で刃をつけてからこの砥石で傷消し 6000番で仕上げます この砥石は砥心地が良く傷をよく消しますのでお気に入りです 砥傷を消しておくと錆びにくくなります 包丁から鉈までなんにでも使います
