How do you double the recipe without it getting too soupy?

When I make 2 boxes of the Zatarain's Spanish Rice, instead of doubling the amount of water for 2 boxes, I cut the doubled amount by about 1/2 to 2/3 c water and only add a bit if it looks like it needs it about 5 mins before done. In my experience, if you use double the water for 2 boxes, it's a bit much (esp with the spanish rice mix).

Question 3

Has zatarain's spanish style rice (different from zatarins spanish rice) been discontinued?  it did not use tomatoes and had more beans - delicious!

We are sorry to disappoint you, but we are no longer manufacturing our Zatarain's Garden District Kitchen Spanish Style Brown Rice with Bell Peppers and White Beans.

We understand how frustrating it is when favorite products are discontinued. As a business, we continue to introduce new products to meet the demand for new flavors and expanding tastes and sometimes must make tough decisions to discontinue products that aren't selling as well as others.

8oz jambalaya = 2.5 cups of water. 8oz red beans rice = 3 cups of water. End product is more "liquidy" than jambalaya, is that how its supposed to be?

Zatarain's Red Beans & Rice requires 3 cups of water. After simmering for 25 minutes, remove from heat and allow it to stand for 5 minutes. Fluff with a fork before serving. ~JM
