It is multifunctional. Yes it has slow cooker ok options.

Will it fix a cake pan inside for baking?

I believe so....but I have never tried it. One thing to remember is the inside has rounded corners.

Will this brown the skin of the turkey

Yes. Turkey was cooked to perfection.

Can I use the turkey bag in this?

You can, if you slit a hole or two in the top. I did not try using a bag in this roaster. I use a probe instant read thermometer, so not need to open the lid. My meats always turn out moist with a nicely crusted skin.
