Great for Petri dishes

I’m using this recipe for high nutrient plates for mycology. 15g sorghum/5g gum gellan/500ml water. These plates come out crystal clear and this brand of gellan solidifies very nicely. No sloppy wet plates. Love this stuff, highly recommend.

Will not Disolve

Something is wrong with this stuff. It will not disolve in boiling water unless you stir it for a LONG time.

Grainy/gritty mouth-feel if you use enough to produce jelly/jam consistency

A small amount provides a limited amount of gelling effect, which can be useful in jams and jellies. But to really make a pectin-like jelly (a stiff gel) and not have a watery gel, the amount needed gives the jelly/jam a rather grainy or gritty mouth-feel. Not so desirable.
