Has anyone used this thermostat successfully with Home Assistant?

Yes. I have a Zooz ZS10-700 Z-Wave usb stick plugged into the mini pc running home assistant. I installed, configured, and tested the thermostat without Z-Wave connected first, then enabled the Z-Wave. It added easily and populated control, sensor, and diagnostic entities under a single thermostat device. I used the custom schedule and custom schedule card integrations to build out the controls, and automations to switch between schedules based on geofencing and presence. It is light years better than the Nest I removed.

Can remote temperature/humidity sensors be used in conjunction with the thermostat? Which ones?

I use external zigbee temp sensors placed around the house to control this thermostat with my hub (Hubitat). I had to write automations rules that adjusted the thermostat's set-point based on the temperatures reported by the external sensors. Works really well.
