Q: These are the 100cc version. What size container should I use these on? How do I know what "cc" rating I need to use for my various storage projects

An empty pint canning jar holds about 500 cc of "air" which is about 20% oxygen. If you have about a pint of "air" in a container that has food in it you would use one of these packets. The number of packets you use in any container depends on how much "air" you have in the container. You can improve on this by pulling as much air out of the container as you can so the packet is dealing with less "air" and therefore less oxygen. If you want to experiment you can put marbles in the container up to the fill line - add water to the top - and pour the water off into a measuring cup to estimate the potential volume of "air" that would be in the filled container without pulling a vacuum in the container. Using a vacuum device (food sealer, brake line bleeder, vacuum cleaner, etc) will reduce the volume of air in the container and as a result the amount of oxygen will be reduced.A second issue is that under ideal conditions (a sealed glass jar with a strong vacuum in it that is filled nearly to the top with something like flour or rice) if the packet is on the bottom it will take quite a while for what little oxygen that remains to migrate from where ever it is to where the packet is and the stored food will be exposed to small amounts of oxygen during that migration - so I put one near the bottom of the container and one near the top. I can pack a 1/2 gallon canning jar with pecans so it has around a pint of "air" and than I pull a vacuum in the jar resulting in very little oxygen to begin with. Two packets is overkill, but overkill works better than under kill.The issue here is that it is the oxygen that makes the food go rancid.

Q: Can I store the unused ones in a vacuum bag to keep them fresh? I am going to use these with my powder spices to prevent clumping.

i do store mine in Food Saver bags to keep them fresh. I make tomato powder and even when using the OA's it still clumps, but the flavor is delicious. I read some where that silica will stop the clumping. I don't know if that's true for spices too.

Q: For coffee lovers: Would these be good to put in with coffee beans to help prolong freshness? Would like to divide up 5# into 1# amounts, if helpful.

I think this would be fine - if whole beans and not ground, vacuum sealing should keep it fresh 4-6 months, maybe longer. If you kept the bags in the freezer, that might extend your time even more. But it's tricky, as there are oils in the beans so they can go rancid if it isn't done properly. Good luck!

I have been researching on your question and I can't find the answer. I have put dehydrated and vacuum sealed food in the freezer but I have never used an absorber with them. Sorry I could not help you. Sounds like a question for me to know too. Hope you find the answer. Carrissa
