I am wanting to gold plate some gun parts that are alluminum. I know you can't plate directly to the alluminum but what would I need to do first?

No you can not. Aluminum can’t be plated. It needs something done to it 1st.

Can you plate zinc if plated nickel first?

If the Zinc has been plated with nickel. Then this kit would allow you to plate onto the Nickel.

Would it be a good idea to use it on a stainless steel handrail?

This kit will work for stainless steel. Make sure you have the stainless polished to the luster you want. You will also need to plate it in sections. You don't want the areas to dry between steps or you will run into problems. We have videos on Youtube that show and explain a lot of these steps that will be required.

why "this kit is not recommended for plating onto guns" what is the difference beetwin metals of guns and other metals ?

This is easier to explain via phone. The short answer is the type of metal most are made out of tend to oxidize very quickly causing problems during the plating process.
