Q: would it fits the new 16” macbook pro?

I hope this helps. Just checked my 15" MacBook Pro 2019 there for you now and it fits in no bother. Plenty of room on each side of the Mac. I'm sure the 16" would have no problem fitting as it's only slightly wider than my 15"

Q: Does this pack open on the other side from the illustrated pictures.

It opens from the rear giving total access, from the top at the front to access the main pouch and from both sides too (kidney areas). Is a cracking bag. Used it for my Sony/Gimbal/lenses and M2P drone. Never an issue, never any leakage. Tough as.

You should be fine. I've a 760D with a wide angle, zoom, macro and kit lens as well as a full size godox flash and a spare compact cam and all ok in the 350 bag.

Q: Has anybody tried to fit gimbal (Ronin-S) inside?

Yeah I'm packed all the way to the top with a Canon 1300d, multiple lenses, drone, cables and cleaning kit, filters and then in the top I have my business cards, ronin s (in parts but its quick to assemble) and it all just about fits 😅
