Q: Can I take off the middle arm and use only the two outer ones untill I get a third monitor? Don't want to buy a stand only to sell it again later.

Yes. Each arm is separate and easy to detach.

Q: do the monitors face downwards?

Just tried this out on my DM653, I can confirm that the monitors can be tilted forwards to about a 45 degree angle

Q: can i connect 3 27in monitors

It's a tough fit with 1 27" centre monitor and 2 side 24" monitors, but it might be possible if the bezels are really thin. I can't say for definite if the setup would work however.
