I gave this mold a try another night and it worked so well I came back and ordered more varieties. Tuiles turned out great. The pattern is very simple, but you can fold tuiles in half while they are still hot. They are very fragile once they are cold so handle them gently and store in an airtight container to preserve crispiness. I sprayed some oil on them before the first batch as was suggested and unmolding went very easy. Didn't use any more oil, but tuile batter contains lots of butter so, likely, no oiling of the mold was needed at all in the first place. Just for information, a simple tuile batter has only four basic ingredients: egg whites, confectionery sugar, all purpose flour and melted butter taken in the same ratio by weight. Stir all together, add some flavoring (vanilla, almond or lavender extract etc) and, perhaps, some food coloring, let it rest while you're preheating the oven and you're good to go. Each batch took me about 7 min at 350F plus convection. I'm planning to try savory tuiles next and also sugar tuiles using tuile sugar.
