Q: Can I use this as a back flow preventer in a home lawn irrigation system?

I use it between a 30 psi irrigation pump and a 1000 liter tote with rainwater. It has worked very well for this application. I’d need to have more details on your application to give an opinion.

Q: Can I use this on a hot water heater overflow pan? I’d prefer no spring at all but I can’t find one.

It should work there but is not made for hot water, so you may reduce the life of the device. Are you trying to prevent insects from coming up the line?

Q: If I were to install this in my bathroom sink drain will it let water from the sink flow through?

It is a check valve, one way only. Guess you could use for bathroom sink just make sure you install it in the proper direction. The purpose is not to flow or drain back.
