Quickest, Easiest, Most Convenient Path to Super Sharp Kitchen Knives
I researched a number of sharpeners and sharpening systems before purchasing the trizor. Although, it's not the most expensive OR least expensive sharpener, I felt it offered the best value for the money. Value to me means a combination of cost, speed, accuracy, ease of use, and durability. Comparing it to other systems, it is faster than all the manual systems. There may be other sharpeners that are as fast, but all of those are powered. Time is money people! Accuracy is a quantification of edge quality. And as well as the naked eye can see, the results are superb! Ease of use couldn't be better. This sharpener is as user friendly as any power tool I've used. Even a caveman can do it! Durability remains to be seen as I've only had this thing for a couple days. But I've sharpened my knives, my fathers knives, and a friends knives. About 25 in total. I've recently contemplated making a cardboard sign and begging on street corners for dull knives. This thing is addicting, people! Who should buy this thing? Anyone with 135 bucks and dull knives. If you have nice quality cutlery, enjoy cooking, and have at least 140 dollars in your checking account, buy this sharpener and six pack of beer so you can sit back and admire your super sharp knives. Actually, it even works quite well on crappy cutlery. I'm talking to you 5 dollar Martha Stewart paring knife! Who shouldn't buy the trizor? All you folks with so much money you can throw away your knives when they get dull. Or anyone not smarter than a cave man. If you are a natural klutz and pose a serious risk to yourself with a sharp knife, this may not be the product for you unless your brother in law is a trauma physician and you have his cellphone number. I used this machine to sharpen several knives with relatively small nicks in them. It took a good number of passes to grind them out. Those manual sharpener advocates that say these machines remove too much material too quickly and will ruin your knives most likely are either investors in manual sharpeners, professional sharpeners who don't want to lose your business, or hipsters with degrees in the arts with lots of free time between job interviews. Is this the perfect sharpening system? Will it give you the finest edge possible? Can it solve world hunger? Probably not. But, can it put an edge on your knives that meets or exceeds the factory edge? Absolutely! Can it do it quickly? Without a doubt! Will it ruin your knives with one slight bobble? No way Jose! Buy it. Use it. Enjoy sharp knives. Spend the rest of your free time begging for dull knives on the street like me!

Best product I've found
It's the closest to perfect I've found. I sharpened my high quality Japanese knives on whetstones for five years and never got the results I wanted. I tried the Work Sharp Pro system but it had problems; mainly that many knives wobbled in the holder. Keeping a perfectly consistent angle is the most important thing when sharpening knives. Which brings me to a tip on using this product. The manual is detailed and tells you exactly how to use the device, but there's one thing left out. The slots don't leave much wiggle room, but there is some. to get the sharpest edge, when you put a knife in a slot make sure to hold the knife firmly against the side of the slot farthest from the center to keep the angle perfect with no wobble. That one tip will help a great deal. Start with your less expensive and medium sized knives. There is a little learning curve how to insert it into the slots properly. Be patient, work slowly until you gain confidence. It is possible to scratch your good knives, but once you learn the technique you can trust this sharpener with your best knives even one with Damascus finishes. It is made for 15° sharpening so it is designed for Japanese knives. I have a couple of 20° German knives I successfully converted to 15° and they are very sharp now. One more tip. I bought the more expensive one which comes with the metal case instead of a plastic one. I'm glad i did. Besides being more durable the sharpener will get hot after working on 4 or 5 knives and the metal helps dissipate the heat. If there's a better product, I don't know what it is. 👍🏻 Sharpness: I am able to get most knives to cut through paper. Usually not quite as sharp as brand new from the factory where a professional knife sharpener put the finishing touches on, but the closest I've ever got to perfection.

Easy to use
This may be one of the best powered knife sharpeners out there. However I do have some concern about how long the stropping surfaces will last. Time will tell. That said this sharpener is simple to use. Just remember to draw the knife slowly through the wheels. Something like 8 seconds for an 8 inch chef's knife. Or in other words about 1 sec per inch of blade per side, makes for a nice cutting edge. May not be as sharp as a manual honing stone, but a lot easier to use for getting a consistent edge angle and decently sharp edge.

Great Product, misleading packaging.
I received my chef’s choice 15 XV stainless steel knife sharpener first week in January 2025. Tested everything out and works fine. I was suspicious of a refurbished or fraudulent unit because I received it in a heavy duty custom plain brown box (inside the Amazon Box) perfectly custom fit with the unit in a plastic bag within Styrofoam and the owners manual. I called the manufacturer, Edgecraft explained the situation gave them the serial number and they said it’s normal to be shipped within a plain brown box if bought online. In retail stores they have the description a picture, etc.. Per the serial # and other wording on the tag, it is authentic and was manufactured in mid August 2024. She didn’t know why several months old. I also indicated that it said the model 15 on the bottom plate. This is the same as the others, I.e., trizorXV 15 XV etc. and is the newer model with just the 15 stamp. The model number given on the front right as depicted in Amazon which is the older model. I advised they should notify consumers with a note inside what the situation is before People jump to the conclusion as I and others have of being a possible fake. Again, no problems with the sharpener and works very well so far for the few days I’ve used it. Seems very well built, has some heft and does feel like a solid 5 pounds. I also feel it is made for home use and should not be abused or excessively used like in a commercial setting. Nice Units for that setting are around $400to $700. Hope this helps.

Keep Your Knives Like New
I had an older Chef's Choice 3 stage sharpener and really liked it but it was very old and not quite the angle I wanted for all my knives. I consider this model a major upgrade and it allowed me to take my knives to a 15 degree edge. Well worthe the price. I have lots of knives and I can now let sharpening keep me occupied and distracted from buying even more. I periodically run my knives through the 2 final stages and that keeps them very sharp. Can I get a little bit nicer edge with a whet stone? Yes, I think I do get a little bit better edge with a whet stone but this is much faster and easier. Buy this and make your old knives feel like brand new sharp knives.
